Barbacoa comes from Arawak, the language of the Taìno, a Caribbean people. It originally refers to the slow cooking of meat under a fire. The word made its way to Mexico and then to the United States via Texas, where it morphed into “Barbecue”. Barbacoa is a Tex-Mex style BBQ sauce, sweet, tangy and slightly spicy with an aromatic blend of dried Mexican peppers. A sauce for the general public for grilling of all kinds!
